If you are like me, you love Girl Scout cookies. These treats come around once a year and make a lot of people very happy. A significant amount of those people buy the cookies in bulk, which means there are a lot of extra cookies to eat. So I devised a recipe to take advantage of those spare cookies, Thin Mint Mud Pie. With a homemade chocolate mousse and of course the cookies, this recipe is sure to please the kids as well as mom and dad.
Ingredients
8 oz semi-sweet chocolate baking chips

2 cups heavy whipping cream
2 tbsp confectioners’ sugar

2 tsp vanilla extract
1 sleeve Thin Mint cookies (if you ran out of Girl Scout cookies, Oreo’s will work)
4 tbsp butter
¼ cup milk
Process
Melt the butter. With the cookies left in the sleeve, crush them with a heavy object (a pan will work) until there are no large chunks of cookie left. In a medium mixing bowl, combine the butter and cookies, stir until fully combined. In a pie dish, spread the mixture evenly and refrigerate for about 20 minutes.
In a large mixing bowl, combine the cream, vanilla, and confectioners’ sugar. In a mixer on medium speed, beat the ingredients 2-3 minutes. You can also mix by hand, but it will take significantly longer (you can have the kids do it).
In a double boiler on low-medium heat, add the chocolate chips. When chocolate is melted, add the milk and stir until combined.
Combine half of the whipped cream with the chocolate mixture and fold until combined. Refrigerate for about 20 minutes.
After the mousse and cookie mixture have cooled, spread the mousse evenly onto the cookie crust. Scoop out of the pie dish and serve.
Taste Test
This recipe is great for chocolate lovers. The chocolaty taste of the mousse is accented wonderfully by the mint from the cookies. The whipped cream on top gives the dessert an extra layer of flavor that goes very well.
The mousse is light and fluffy while the cookie crust adds a modest crunch.
Leftover Quality
After a night in the fridge, the mud pie lost nothing. The texture remained the same and it lost none of the flavor.
Overall Grade
I grade the Thin Mint Mud Pie with an A. Great texture and excellent flavor make this dessert a winner.
